Tomato Parfait (Serves 6)
Ingredients
1kg ripe tomatoes
200g tomato paste
125g red bell pepper
1 celery stock
6 saffron stems
1 thyme stem
3 basil leaves
1/2 garlic clove
15g sugar
180g cream
5 sheets of gelatin
1 tablespoon ketchup
10g tarragon leaves
2 basil leaves
1 splash of Tabasco
salt & pepper to taste
